Midweek dinners can be quick and easy (and relatively healthy). My favorite easy go-to is the Trader Joe’s Chicken Wonton Soup pictured above. The soup can be found in the frozen food section of Trader Joe’s and is perfect to keep on hand for evenings when you don’t have a lot of time to cook. I always have one in my freezer and especially love to heat one up on nights when I travel and don’t have time to grocery shop right away. I personally like to add extra vegetables to the soup for additional fiber and nutrition; one can never have too many vegetables! I switch up which vegetables I add, but today I added frozen broccoli and The Trader Joe’s Frozen Organic Vegetable Trio that consists of carrots, corn and beans. This soup also tastes great with any “stir fry” veggie mix. Frozen vegetables are a great staple to keep in your freezer and are especially great if you live alone and/or travel as you never have to worry about food waste!
