Eating delicious meals at home is easier than ever!
This is one of those weeks where I will be in and out of town only to come home repack and leave again, so it didn’t make sense to make my usual weekly grocery run (I hate having to throw away food before going out of town). On weeks like this I depend on pre-prepared foods to get through the few days I am home. I find that with a little planning and foresight I can save money (by not ordering delivery or eating out at restaurants for every meal). I can also still eat healthy-ish meals by avoiding fast food take-out.
I am a firm believer that when planned properly pre-made foods can create a meal that is just as delicious as anything home made or served in a restaurant. I am very lucky to live so close to an Eataly (for those who don’t know, Eataly is an Italian food emporium with multiple restaurants, food stations and alllll of the Italian food specialty items you could ever imagine). Eataly recently expanded their grab and go section so this dinner was a very quick and easy pick up and go. I grabbed the zuchinni and summer squash salad from the grab and go section, nabbed some fresh made stracciatella in the cheese shop, and then swiped the delicious focaccia from the bakery. It was the perfect (semi) healthy Italian meal that required zero prep from me, and cost a fraction of a restaurant meal. Double win!
However, even if you don’t have an Eataly near you, you can still create totally delicious and indulgent meals from products at your own grocery store or local market. The key is to go into your shopping experience having already planned your menu and then shop away!
