So my New Years health kick is still going strong. It’s a lifestyle change not a diet! However, just because you are trying to eat healthy doesn’t mean you still can’t live a little. I am all about finding healthy alternatives that actually satisfy food cravings. What is the point in eating a healthy alternative if it just leaves you craving the real thing even more? Today’s healthy hack is a “cookie dough” dip that will also help satisfy your sweet tooth. The recipe below is a compilation of a few different recipes found online and some trial and error on my own part. Serve with Whole Foods Vanilla Waffle Cookies; each cookie is only 23 calories and 3 carbs per cookie. Pretzels also seem to be a popular paring according to my online research. However, you could also serve with fruit, or your favorite gluten free cookies, use whatever you like! The dip itself is packed with protein and fiber so just a little bit is needed to leave you feeling full and satisfied. Sweet success!
Healthy Cookie Dough Dip Recipe
1 Can chickpeas, drained and rinsed
½ cup cashew butter (or any other nut butter you may have on hand)
3 tablespoons maple syrup
2 tablespoons raw fiber, or ground flax seed, this helps create the “dough like” consistency
1 tablespoon vanilla extract
½ tablespoon almond extract
2 tablespoons of almond coconut milk (or any other milk substitute), add more if needed
Hint of salt to taste
Cardamon to taste
Dark chocolate chips, mix in as much or as little as you like! Also feel free to use carob or any other chocolate substitute you prefer
Mix all ingredients (except for chocolate chips) in a food processor, or use your magic bullet! Once all blended, stir in chocolate chips. Serve with you favorite milk alternative and enjoy!
